Velvet Grove Recipe

Ingredients:

  • 2 oz Everleaf Forest Aperitif
  • ¾ oz Date syrup (store-bought or homemade — see below)
  • ½ oz Espresso or cold brew concentrate
  • ½ oz Aquafaba or egg white
  • Optional: Pinch of flaky sea salt

Method:

  1. Add Everleaf Forest, date syrup, espresso, and aquafaba or egg white to a shaker (no ice).
  2. Dry shake for 10 seconds to build foam.
  3. Add ice and shake again until cold and smooth.
  4. Strain into a chilled coupe glass.
  5. Garnish with a dark chocolate micro-grate rim (wet rim with syrup to apply) or a light dusting of grated chocolate over the foam.

How to Make Date Syrup
Combine 1 cup of chopped dates with 1½ cups of water in a small saucepan. Bring to a simmer and cook for 10–15 minutes, stirring occasionally until the dates soften and the mixture thickens. Mash, then strain through a fine mesh sieve or cheesecloth, pressing to extract as much liquid as possible. Cool before using — it’ll keep for up to two weeks in the fridge.
