THE TASTE
Roasted pear leads, with black tea, clove, cardamom, ginger, star anise, and peppercorn folding in warmth and spice. Verjus brings lift; kombu and olive brine pull the finish toward something subtly saline.

THE STORY
Created by Chef William Wade and Aaron Trotman in Australia, NON is built more like food than like wine — culinary techniques applied to bottle. NON 2 is the spiced expression: caramelised pear, kombu, and a layered botanical backbone. Vegan and gluten-free, made without alcohol.

THE RITUAL
Serve chilled in a wine glass. Best alongside food — aged cheese, roasted vegetables, mushroom dishes, pork, poultry, or holiday-style meals.
