The Mood
A special bottle. Slow dinner. Good glassware. Nowhere else to be.

The Taste
A sweet, layered, harmonious nose that reads like a properly aged red. On the palate, cassis and eucalyptus sit over forest floor, caramelized mushroom and a soft finish of nougat.

The Story
A dealcoholized red from the Heribert Bayer winery in Neckenmarkt, Burgenland, Austria. Limited Edition Nr. 01 blends 50% Blaufränkisch, 30% Pinot Noir and 20% Merlot from vines over 60 years old on the Neckenmarkter Hochberg. The wine spent 24 months in new French barriques and close to 18 years ageing in bottle before being gently dealcoholized as a cuvée, using vacuum distillation with aroma recovery and nothing added. Only 2,500 individually numbered bottles were produced.

The Ritual
Serve slightly chilled at 13–14°C in a Burgundy glass. Open about 30 minutes before pouring and give it time to unfold. Pair with mushrooms, braised vegetables, ragù or other slow-cooked, savoury dishes.
